Chicken Pot

12 chicken thighs
15 ml cooking oil
3 large onions, sliced baby potatoes
Baby carrots
Green beans, sliced
125 ml chutney
150 ml cream
75 ml mayonnaise
1 packet onion soup
15 ml soy sauce
200 ml grated Cheddar cheese
350 g mushrooms, sliced

Brown chicken pieces in heated cooking oil in potjie, remove and set aside.
Sauté onion until transparent, then replace chicken on top of onions.
Arrange potatoes, carrots and beans on top of chicken.
Mix chutney, half the cream, the mayonnaise and onion soup powder and pour over vegetable layer.
Cover with lid and allow to simmer gently for 1 hour or until chicken is almost tender.
Add soy sauce, remaining cream, cheese and mushrooms.
Cover with lid and simmer for a further 15 minutes until cheese has melted.
