Potjie No: 1 and 2

Ingredients
1 duck, cut into portions
1 small pork fillet (optional)
15 ml butter
15 ml cooking oil
300 ml dry white wine
150 ml chicken stock
5 ml salt
Freshly ground black pepper to taste
Vegetables in season (baby potatoes, carrots and mealies, pickling onions, fresh or frozen peas, asparagus)
250 ml orange juice
5 ml cornflour

Method
Heat potjie, add butter and oil and brown duck and pork fillet.
In a smaller potjie heat wine, stock, salt and pepper.
Add to duck.
Cover with lid and simmer slowly for 1.5 hours or until duck is almost cooked.
Arrange potatoes, onions, carrots, peas and other vegetables in season on top of duck.
Replace lid and simmer for a further 15 minutes or until the vegetables are cooked but still crispy.
Mix orange juice and cornflour and add to the vegetables.
Simmer for another 10 minutes.
Stir the potjie carefully and serve with rice and a mixed salad.
