Braised Sweet Potatoes

Serves: 6 as a side dish

1 kg sweet potatoes, sliced
50 g butter
75 ml brown sugar
1 stick cinnamon
15 ml chopped root ginger or 5 ml ground ginger
1 small piece naartjie, orange or lemon peel
2 ml salt
125 ml orange juice

Grease potjie with butter.
Arrange a layer of sweet potatoes in the base of the potjie, dot with a little butter and sprinkle with a little sugar.
Repeat layers of sweet potato, sugar and butter.
Place cinnamon stick, ginger and peel on top.
Season with salt and pour orange juice over.
Cover with lid and simmer over a small fire for 30-45 minutes or until the sweet potatoes are done and a syrupy sauce has formed.
