Instant Bean Potjie

Ingredients
15 ml cooking oil
6 rashers rindless bacon, chopped
2 large onions, sliced
1 x 410 g can butter beans
1 x 410 g can red kidney beans 30 ml brown sugar
15 ml vinegar
5 ml prepared mustard

Method
Heat oil in potjie, add bacon and fry until crisp.
Add onion and sauté until transparent.
Drain beans if necessary.
Add beans and remaining ingredients to potjie.
Cover with lid and simmer gently for 20 minutes or until the beans are heated through.
