Potjie Roast Potatoes

8 medium potatoes
750 ml cooking oil for frying
1-2 cloves garlic, crushed
1 sprig fresh rosemary
5 ml salt

Peel potatoes.
Half fill potjie with water.
Bring to the boil and add potatoes.
Parboil potatoes over a medium fire for about 10 minutes.
Discard water and dry potjie thoroughly.
Pour in oil.
Heat over a medium fire until oil starts to bubble.
Add garlic and rosemary.
Add potatoes and cook quickly until golden brown.
Remove potatoes with a slotted spoon and drain on paper towelling.
Season with salt and serve immediately.
